An Easy and Healthy Recipe for the Perfect Holiday Breakfast

With all the holiday festivities, family gatherings and not to mention loads of baked goods, a healthy meal seems a little out of reach.  Do not fret I have an easy and healthy breakfast that will make all your guests delighted. I have a wonderful breakfast sandwich with a whole wheat biscuit, a meatless sausage patty, and super yummy potatoes medley. I promise this breakfast will satisfy the pickiest of eaters. 

Start the Prep: Begin by cutting potatoes, peppers, and onion into cubes.  Preheat your oven to 350 degrees and prep your fry pan for the potato medley. The key is to get your pan super hot, I am using my brand new Made In Cookware stainless steel fry pan. I add the olive oil to the pan to heat. When the pan is hot, add in potatoes and let cook until almost soft. Add peppers and onion. Cook until the potatoes are golden brown and add a pinch of salt and pepper to taste. Remove pan from heat.  

On a baking sheet place biscuits in the preheated oven, follow instructions for length of time for cooking. Bake until golden brown and let cool. In heated frying pan place vegan sausages and cook as instructed on package. In the same or another heated pan begin to cook the eggs. I prefer sunnyside up in order to get a good yolk. To build sandwich cut the tomato into thin slices and lightly salt. Place the sausage patty on the bottom of the biscuit, then the tomato and finally place the egg on top. Finish the plate with the potato medley and you are ready to serve.

I will say one of the things I have learned when cooking anything is the importance of a good set of pots and pans. It makes a big difference in how things come out.
